Description

A quick and nourishing Ground Turkey Soup that comes together in about 30 minutes, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 4 cups chicken broth
  • 1 cup rice
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat until cooked through, about 5 to 7 minutes.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3 to 5 minutes.
  3. Stir in the rice, chicken broth, kale, thyme, and oregano, ensuring everything is well combined.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the rice is tender.
  5. Season with salt and pepper to taste before serving.

Notes
