- 1 pound ground turkey
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- Salt and pepper to taste
- Olive oil for cooking
- Grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat until it shimmers. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey, breaking it apart with a spoon while cooking until it’s browned evenly, approximately 5-7 minutes.
- Stir in the orzo pasta and pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce to a simmer and cover.
- Cook for about 10 minutes, stirring occasionally, until the orzo is tender and the liquid has mostly been absorbed.
- Add the fresh spinach, stirring gently until it wilts down, which should take about 2-3 minutes.
- Season with salt and pepper to taste, and serve warm, topping with grated Parmesan cheese if desired.
Notes
Avoid adding garlic too soon to prevent it from burning. Let leftovers mingle with roasted vegetables for a grain bowl.
