  • 1 large yellow onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth (low-sodium is a good choice)
  • 4 cups water
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 6 ounces egg noodles (or your preferred pasta)
  • Salt to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Sauté for 8-10 minutes until softened.
  2. 2. Stir in garlic and cook for 1 minute until fragrant.
  3. 3. Pour in chicken broth and water. Add chicken, thyme, rosemary, black pepper, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for at least 30 minutes, or until chicken is cooked through.
  4. 4. Remove chicken from pot and shred or dice.
  5. 5. Bring broth back to a gentle boil. Add noodles and cook according to package directions until al dente.
  6. 6. Return chicken to pot. Stir in parsley (if using) and season with salt to taste.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. It also freezes well for up to 2-3 months. Reheat gently on the stovetop, adding a splash of broth or water if needed. Noodles may soften upon thawing and reheating.
