Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth (low-sodium is a good choice)
- 4 cups water
- 1 pound boneless, skinless chicken breasts or thighs
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1 bay leaf
- 6 ounces egg noodles (or your preferred pasta)
- Salt to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Sauté for 8-10 minutes until softened.
- 2. Stir in garlic and cook for 1 minute until fragrant.
- 3. Pour in chicken broth and water. Add chicken, thyme, rosemary, black pepper, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for at least 30 minutes, or until chicken is cooked through.
- 4. Remove chicken from pot and shred or dice.
- 5. Bring broth back to a gentle boil. Add noodles and cook according to package directions until al dente.
- 6. Return chicken to pot. Stir in parsley (if using) and season with salt to taste.
- 7. Remove bay leaf. Ladle into bowls and serve hot.
Notes
Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. It also freezes well for up to 2-3 months. Reheat gently on the stovetop, adding a splash of broth or water if needed. Noodles may soften upon thawing and reheating.
