Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (90% lean or higher)
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 8 cups beef broth (low sodium preferred)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 head green cabbage, thinly sliced
  • 1 (15 ounce) can kidney beans, rinsed and drained (optional)
  • 1 tablespoon Worcestershire sauce (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. 1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease.
  2. 2. Add chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in minced garlic, thyme, rosemary, and smoked paprika. Cook for 1 minute until fragrant. Season with salt and pepper.
  4. 4. Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat, cover, and simmer for at least 30 minutes.
  5. 5. Add thinly sliced cabbage and optional kidney beans. Stir.
  6. 6. Continue to simmer, covered, for 15-20 minutes, or until cabbage is tender. Stir in optional Worcestershire sauce in the last 5 minutes.
  7. 7. Taste and adjust seasoning. Serve hot, garnished with parsley.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. Freezes well for up to 2-3 months. Reheat gently on the stovetop, stirring occasionally. Add a splash more broth if too thick. For microwave reheating, use a microwave-safe bowl and heat on 50% power, stirring periodically.
