  • 8 cups low-sodium chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup small pasta (like ditalini, acini di pepe, or elbow macaroni)
  • 1 cup fresh spinach (or kale, stems removed and roughly chopped)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground chicken and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion, diced carrots, and diced celery to the pot. Cook, stirring occasionally, until the vegetables begin to soften, about 6-8 minutes.
  3. Stir in the minced garlic, dried Italian seasoning, dried oregano, and red pepper flakes (if using). Cook for another minute until fragrant.
  4. Pour in the chicken broth and add the undrained diced tomatoes. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes to allow the flavors to meld.
  5. Stir in the small pasta and cook according to package directions, usually about 8-10 minutes, until al dente.
  6. Add the fresh spinach (or kale) during the last few minutes of cooking, stirring until it wilts.
  7. Season the soup generously with salt and freshly ground black pepper to taste. Adjust seasonings as needed.
