Description

Nutritious and delicious oatmeal bars made with rolled oats, fruit, and nut butter, perfect for breakfast or snacks.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup mashed banana or applesauce
  • 1 cup frozen berries (mixed or your choice)
  • 1/2 cup nut butter (almond, peanut, or any preferred)
  • 1/4 cup maple syrup or agave syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper for easy removal later.
  2. Mix the rolled oats, mashed banana (or applesauce), nut butter, maple syrup, vanilla extract, cinnamon, and salt until well combined, creating a thick batter.
  3. Fold in the frozen berries to ensure they are evenly distributed throughout the mixture while maintaining their shape.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes or until set and golden on the edges.
  6. Allow to cool before cutting into bars.

Notes

Avoid overmixing the batter to keep the bars light and chewy. Lining the baking dish is essential for easy removal.
