  • 1 cup chopped yellow onion (about 1 medium)
  • 1 cup chopped carrots (about 2 medium)
  • 1 cup chopped celery (about 23 ribs)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • Salt and freshly ground black pepper to taste
  • 4 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • ½ cup half-and-half or heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Optional: Fresh chopped parsley for garnish
  • Optional: Flaky biscuits or crusty bread for serving

Instructions

  1. 1. Heat olive oil or butter in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. 2. Add garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  3. 3. Season with salt and pepper.
  4. 4. Pour in chicken broth and bring to a simmer.
  5. 5. Stir in cooked chicken, peas, and corn. Simmer for 5 minutes.
  6. 6. In a small bowl, whisk together flour and butter to form a roux.
  7. 7. Slowly whisk the roux into the simmering soup until thickened. Simmer for 2-3 minutes.
