Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth (low sodium is fine)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • 1 cup diced potatoes (Yukon Gold or red potatoes work well)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes, until the vegetables begin to soften.
  2. 2. Add the minced garlic to the pot and cook for another minute until fragrant.
  3. 3. Add the chicken breasts or thighs to the pot. Pour in the chicken broth. Add the dried thyme, rosemary, black pepper, and salt.
  4. 4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through.
  5. 5. Carefully remove the cooked chicken from the pot and set it aside on a cutting board. Shred or dice it into bite-sized pieces.
  6. 6. Add the diced potatoes to the simmering broth in the pot. Cook for 10-15 minutes, or until the potatoes are tender.
  7. 7. Stir in the frozen corn and frozen peas. Cook for another 5 minutes, or until the vegetables are heated through.
  8. 8. Return the shredded or diced chicken to the pot. Stir to combine and allow the soup to heat through for a few more minutes.
  9. 9. Taste and adjust seasoning with additional salt and pepper if needed.
  10. 10. Ladle the soup into bowls. Garnish with fresh parsley, if desired.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. This soup also freezes well for up to 3 months. Reheat gently on the stovetop or in the microwave.
