- 2 tablespoons olive oil
- 1 pound Italian sausage (sweet or spicy, your preference)
- 1 large onion, chopped
- 2–3 carrots, peeled and chopped
- 2–3 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 (9 ounce) package refrigerated cheese tortellini (or your favorite kind)
- 1–2 cups fresh spinach (optional, but recommended for added nutrition and color)
- Grated Parmesan cheese, for serving
- Fresh parsley, chopped, for serving (optional)
Instructions
- 1. Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until it’s browned and cooked through. Drain off any excess grease and transfer the cooked sausage to your slow cooker.
- 2. In the same skillet, add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened slightly, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- 3. Add the sautéed vegetables and garlic to the slow cooker with the browned sausage. Pour in the chicken broth and diced tomatoes (including their juice). Stir in the Italian seasoning, salt, and pepper.
- 4. Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours, until the vegetables are tender and the flavors have melded.
- 5. About 20-30 minutes before serving, stir in the refrigerated tortellini and fresh spinach (if using). Cook until the tortellini are tender and the spinach has wilted.
- 6. Taste and adjust seasoning. Ladle the hot soup into bowls. Garnish with grated Parmesan cheese and fresh parsley, if desired.
Notes
Once cooled, store the soup in an airtight container in the refrigerator for up to 3-4 days. For best texture when reheating, consider storing tortellini separately and adding them during the reheating process. Reheat gently on the stovetop or in the microwave until heated through.
