Description

Ingredients

  • 1 tablespoon olive oil or other cooking oil
  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • 1 medium head of green cabbage, cored and thinly sliced (about 68 cups)
  • 1 cup beef broth or water
  • 1 tablespoon soy sauce or tamari (optional, for added umami)

Instructions

  1. 1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. 2. Add the chopped onion to the skillet with the browned beef. Cook, stirring occasionally, until the onion is softened and translucent, about 5-7 minutes.
  3. 3. Stir in the minced garlic, dried thyme, salt, and black pepper. Cook for another minute until fragrant.
  4. 4. Add the thinly sliced cabbage to the skillet. Stir it into the beef and onion mixture.
  5. 5. Pour in the beef broth (or water) and the soy sauce (if using). Bring the mixture to a simmer.
  6. 6. Cover the skillet and reduce the heat to low. Let it simmer gently for 20-30 minutes, or until the cabbage is tender to your liking. Stir occasionally.

Notes

Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet with a splash of liquid or in the microwave until hot.
