- 1 tablespoon olive oil or other cooking oil
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- 1 medium head of green cabbage, cored and thinly sliced (about 6–8 cups)
- 1 cup beef broth or water
- 1 tablespoon soy sauce or tamari (optional, for added umami)
Instructions
- 1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- 2. Add the chopped onion to the skillet with the browned beef. Cook, stirring occasionally, until the onion is softened and translucent, about 5-7 minutes.
- 3. Stir in the minced garlic, dried thyme, salt, and black pepper. Cook for another minute until fragrant.
- 4. Add the thinly sliced cabbage to the skillet. Stir it into the beef and onion mixture.
- 5. Pour in the beef broth (or water) and the soy sauce (if using). Bring the mixture to a simmer.
- 6. Cover the skillet and reduce the heat to low. Let it simmer gently for 20-30 minutes, or until the cabbage is tender to your liking. Stir occasionally.
Notes
Allow to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet with a splash of liquid or in the microwave until hot.
