- 2 cups crushed tomatoes
- 1/4 cup tomato paste
- 3 tbsp maple syrup
- 2 tbsp yellow mustard
- 8 small Kaiser rolls or sesame buns
Instructions
- Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
- Add the diced onion and green pepper, sautéing for about eight minutes until softened.
- Incorporate the minced garlic and sauté for an additional two minutes.
- Stir in the cooked lentils, chili powder, oregano, and cayenne pepper.
- Season with salt and pepper, then mix in the crushed tomatoes and tomato paste.
- Cook for another ten minutes, adding water or extra tomatoes as needed.
- Finally, stir in the maple syrup and yellow mustard, cooking for an additional two minutes.
- Spoon a cup of the Sloppy Joes filling onto toasted buns and enjoy!
