Ingredients

  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat. Add chopped onion and garlic, and sauté until soft and fragrant.
  2. Stir in the rice, cooking for a few minutes until slightly toasted, which adds depth to the flavor.
  3. Add diced tomatoes, black beans, vegetable broth, cumin, paprika, salt, and pepper, ensuring all ingredients are well mixed.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked and tender.
  5. Fluff the rice with a fork and garnish with fresh cilantro before serving to add a pop of freshness.

Notes
