Description

A hearty and nourishing Tuscan White Bean Soup perfect for chilly evenings, combining white beans, vegetables, and greens in a flavorful broth.


Ingredients

  • 1 can white beans (cannellini or great northern)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add onion, garlic, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in white beans, vegetable broth, thyme, rosemary, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Add kale or spinach and cook until wilted, about 2-3 minutes.
  6. Stir in lemon juice before serving.
