- 1 cup lentils, rinsed
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, grated
- 1 cup celery, chopped
- 1/2 cup breadcrumbs
- 1/4 cup ground flaxseed
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the lentils and vegetable broth in a pot. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes. Drain any excess liquid.
- Sauté onions, garlic, carrots, and celery in a skillet until soft, about 5-7 minutes.
- Mix together cooked lentils, sautéed vegetables, breadcrumbs, ground flaxseed, soy sauce, thyme, oregano, salt, and pepper in a large bowl until evenly incorporated.
- Transfer the mixture to a greased loaf pan, smoothing the top.
- Bake in the preheated oven for 45-50 minutes until the top is slightly firm and golden.
- Let cool for a few minutes before slicing. Serve warm.
