Description
A comforting and easy Vintage Mexican Casserole recipe, perfect for weeknight dinners. Made with ground beef, beans, tomatoes, and cheese.

- 1 pound ground beef or ground turkey
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 (8-ounce) can tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 1 (10.5-ounce) can condensed cream of mushroom soup (or cream of chicken)
- ½ cup milk (or water)
- 1 ½ cups shredded cheddar cheese (or a Mexican blend)
- Optional toppings: sour cream, chopped fresh cilantro, diced avocado, salsa
Instructions
- 1. In a large skillet, cook ground meat until browned; drain grease. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute.
- 2. Stir in rinsed and drained black beans and pinto beans, undrained Rotel, and tomato sauce.
- 3. Sprinkle with chili powder, cumin, oregano, salt, and pepper. Stir well.
- 4. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes.
- 5. In a separate bowl, whisk together condensed soup and milk until smooth.
- 6. Pour soup mixture into the skillet; stir to combine. Cook uncovered for 5 minutes until slightly thickened.
- 7. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- 8. Pour mixture into the prepared dish and spread evenly.
- 9. Sprinkle shredded cheese evenly over the top.
- 10. Bake for 20-25 minutes, or until cheese is melted, bubbly, and lightly golden.
- 11. Let rest for 5-10 minutes before serving.
Notes
Allow casserole to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or larger portions in the oven at 350°F (175°C) until hot.
