Description

A comforting and easy Vintage Mexican Casserole recipe, perfect for weeknight dinners. Made with ground beef, beans, tomatoes, and cheese.


Ingredients

  • 1 pound ground beef or ground turkey
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (10-ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (8-ounce) can tomato sauce
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1 (10.5-ounce) can condensed cream of mushroom soup (or cream of chicken)
  • ½ cup milk (or water)
  • 1 ½ cups shredded cheddar cheese (or a Mexican blend)
  • Optional toppings: sour cream, chopped fresh cilantro, diced avocado, salsa

Instructions

  1. 1. In a large skillet, cook ground meat until browned; drain grease. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute.
  2. 2. Stir in rinsed and drained black beans and pinto beans, undrained Rotel, and tomato sauce.
  3. 3. Sprinkle with chili powder, cumin, oregano, salt, and pepper. Stir well.
  4. 4. Bring to a simmer, then reduce heat, cover, and cook for 10-15 minutes.
  5. 5. In a separate bowl, whisk together condensed soup and milk until smooth.
  6. 6. Pour soup mixture into the skillet; stir to combine. Cook uncovered for 5 minutes until slightly thickened.
  7. 7. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  8. 8. Pour mixture into the prepared dish and spread evenly.
  9. 9. Sprinkle shredded cheese evenly over the top.
  10. 10. Bake for 20-25 minutes, or until cheese is melted, bubbly, and lightly golden.
  11. 11. Let rest for 5-10 minutes before serving.

Notes

Allow casserole to cool completely before storing in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or larger portions in the oven at 350°F (175°C) until hot.
