Description

A one-pan meal with chicken thighs, cherry tomatoes, Kalamata olives, red onion, and garlic, infused with vibrant Mediterranean flavors.

Ingredients

Scale
  • 4 chicken thighs
  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken thighs, cherry tomatoes, olives, red onion, and garlic in a large baking dish.
  3. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper.
  4. Toss everything together to coat the chicken and vegetables evenly.
  5. Bake in the preheated oven for about 30-40 minutes, or until the chicken is cooked through and the juices run clear.
  6. Garnish with fresh parsley before serving.

Notes

Allow the chicken to rest for 5 minutes before serving to redistribute juices. Store leftovers in an airtight container for up to 3 days and reheat in a 350°F oven.
