Description

A creamy, high-protein chili featuring shredded chicken, white beans, and spices, perfect for dinner or meal prep.


Ingredients

  • 2 cups shredded chicken
  • 1 can of white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream
  • Fresh cilantro for garnish

Instructions

  1. Sauté the onion and garlic until soft, about 3-4 minutes.
  2. Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 20 minutes.
  4. Stir in the heavy cream or sour cream and cook for an additional 5 minutes.
  5. Serve hot, garnished with fresh cilantro.

Best eaten fresh the same day; cream changes texture if it sits.
