- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat until it shimmers slightly.
- Add the ground beef or turkey and cook until browned, crumbling it with a spoon.
- Stir in garlic powder, onion powder, salt, and pepper, and let toast for about a minute.
- Add the mixed vegetables and cook for another 2-3 minutes.
- Pour in the beef or vegetable broth and bring to a simmer.
- Stir in the elbow macaroni and cook according to package instructions until al dente.
- Mix in cottage cheese until well blended.
