Description

A hearty and nourishing lasagna soup made with ground turkey, whole wheat noodles, and ricotta cheese, perfect for cozy nights.


Ingredients

  • 1 pound ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces whole wheat lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground turkey or chicken over medium heat with the diced onion and garlic until the meat is no longer pink and the onions are translucent.
  2. Add the crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, watching for the bubbles to start forming on the surface.
  3. Reduce heat and let simmer for about 20 minutes, or until the noodles are tender and the sauce thickens slightly.
  4. Stir in the ricotta cheese until fully incorporated, making sure there are no lumps.
  5. Serve hot, topped with shredded mozzarella and fresh basil for brightness.
