- 1 pound ground turkey or chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 ounces whole wheat lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the ground turkey or chicken over medium heat with the diced onion and garlic until the meat is no longer pink and the onions are translucent.
- Add the crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, watching for the bubbles to start forming on the surface.
- Reduce heat and let simmer for about 20 minutes, or until the noodles are tender and the sauce thickens slightly.
- Stir in the ricotta cheese until fully incorporated, making sure there are no lumps.
- Serve hot, topped with shredded mozzarella and fresh basil for brightness.
