- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 10 cloves garlic, minced
- 0.5 cup beef broth
- 0.25 cup soy sauce (low sodium recommended)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.25 cup unsalted butter, cut into cubes
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening, optional)
Instructions
- 1. Pat the beef cubes dry with paper towels and season with salt and pepper.
- 2. (Optional) Heat olive oil in a skillet over medium-high heat and sear beef cubes until browned on all sides. Transfer to slow cooker.
- 3. In a medium bowl, whisk together minced garlic, beef broth, soy sauce, Worcestershire sauce, Dijon mustard, thyme, and rosemary.
- 4. Pour sauce mixture over beef in the slow cooker.
- 5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is fork-tender.
- 6. Stir in cubed butter about 30 minutes before serving.
- 7. (Optional for thicker sauce) Remove beef, turn slow cooker to high, stir in cornstarch slurry, and simmer until thickened, then return beef.
