Description

A delicious Spinach Artichoke Bake made with Greek yogurt for extra protein without sacrificing texture.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup Greek yogurt
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped spinach, artichoke hearts, Greek yogurt, mozzarella cheese, Parmesan cheese, garlic, onion powder, salt, and pepper in a large mixing bowl.
  3. Mix until well combined.
  4. Transfer the mixture into a baking dish and spread it evenly.
  5. Bake for 25-30 minutes or until the top is golden and bubbly.

Notes

Best eaten fresh the same day, but can be reheated in the oven.
