A comforting classic chicken soup made with tender chicken, fresh vegetables, and fragrant herbs, perfect for warming up on chilly days.
Ingredients

- 1 whole chicken, cut into pieces
- 8 cups of water
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken and water. Bring to a boil over high heat.
- Skim any foam that rises to the top.
- Add the carrots, celery, onion, garlic, bay leaves, salt, and pepper.
- Reduce the heat to low and simmer for about 60 minutes.
- Remove the chicken from the pot, let it cool, and shred the meat. Discard the bones.
- Return the shredded chicken to the soup.
- Simmer for an additional 10-15 minutes.
- Adjust seasoning as needed and garnish with fresh parsley before serving.
Notes
Best eaten fresh the same day, but can be frozen for up to 3 months without parsley. Adjust salt after the final simmer.
