Description

A comforting classic chicken soup made with tender chicken, fresh vegetables, and fragrant herbs, perfect for warming up on chilly days.


Ingredients

Scale
  • 1 whole chicken, cut into pieces
  • 8 cups of water
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the chicken and water. Bring to a boil over high heat.
  2. Skim any foam that rises to the top.
  3. Add the carrots, celery, onion, garlic, bay leaves, salt, and pepper.
  4. Reduce the heat to low and simmer for about 60 minutes.
  5. Remove the chicken from the pot, let it cool, and shred the meat. Discard the bones.
  6. Return the shredded chicken to the soup.
  7. Simmer for an additional 10-15 minutes.
  8. Adjust seasoning as needed and garnish with fresh parsley before serving.

Notes

Best eaten fresh the same day, but can be frozen for up to 3 months without parsley. Adjust salt after the final simmer.
