- ½ cup orzo pasta
- 1 cup chopped fresh spinach or kale
- Juice of ½ lemon
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
- Crumbled feta cheese (optional, for garnish)
Instructions
- 1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, 5-7 minutes.
- 2. Add garlic, oregano, thyme, basil, and red pepper flakes (if using); cook for 1 minute until fragrant.
- 3. Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.
- 4. Stir in cannellini beans and shredded chicken. Bring to a gentle simmer.
- 5. Add orzo pasta and cook according to package directions (about 8-10 minutes), stirring frequently.
- 6. Stir in spinach or kale until wilted, 1-2 minutes.
- 7. Remove from heat. Stir in lemon juice. Season with salt and pepper to taste.
- 8. Ladle into bowls and garnish with parsley and feta cheese, if desired.
