Description
A hearty and creamy cheeseburger soup, rich with beef and cheese flavors, perfect for a comforting meal.
Ingredients
Scale
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 cup cauliflower, riced
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Optional: chopped green onions or bacon for garnish
Instructions
- Brown the ground beef with diced onion and minced garlic over medium heat until the meat is no longer pink and the onions are translucent.
- Drain any excess fat from the pot.
- Add the beef broth, diced tomatoes, and riced cauliflower to the pot. Bring to a boil, and watch for tiny bubbles forming.
- Reduce heat and simmer for about 10 minutes, until the cauliflower is fork-tender.
- Stir in the heavy cream, shredded cheddar cheese, and Worcestershire sauce, and notice how the soup takes on a creamy consistency.
- Season generously with salt and pepper to taste, adjusting based on your preferences.
- Heat until the cheese is melted and the soup is heated through, about 2-3 minutes.
- Serve hot and garnish with chopped green onions or crispy bacon if desired.
Notes
For best results, add the cream slowly to prevent splitting. Simmer long enough for the cauliflower to absorb flavors. Consider using chicken broth for a lighter option.
