Ingredients

  • 1 pound kielbasa sausage, sliced
  • 4 cups potatoes, diced (use Russet for fluffiness)
  • 2 cups shredded cheese (cheddar or a mix)
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika (optional for a smoky flavor)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat, then add the chopped onion and garlic; sauté until softened, about 5 minutes.
  3. Combine the diced potatoes, sautéed onion and garlic, sliced kielbasa, and half of the shredded cheese in a large bowl, mixing gently.
  4. Pour in the milk, then add salt, pepper, and paprika if using; stir well to combine.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with the remaining cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Uncover and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is golden.
  9. Allow to cool slightly before serving.
