- 1 pound kielbasa sausage, sliced
- 4 cups potatoes, diced (use Russet for fluffiness)
- 2 cups shredded cheese (cheddar or a mix)
- 1 cup milk
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika (optional for a smoky flavor)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a skillet over medium heat, then add the chopped onion and garlic; sauté until softened, about 5 minutes.
- Combine the diced potatoes, sautéed onion and garlic, sliced kielbasa, and half of the shredded cheese in a large bowl, mixing gently.
- Pour in the milk, then add salt, pepper, and paprika if using; stir well to combine.
- Transfer the mixture to a greased baking dish and spread evenly.
- Top with the remaining cheese.
- Cover with foil and bake for 30 minutes.
- Uncover and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is golden.
- Allow to cool slightly before serving.
