Description

Transform leftover mashed potatoes into crispy and comforting cheese puffs, perfect for a quick snack or side dish.

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup flour
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Combine the leftover mashed potatoes, shredded cheese, flour, green onions, garlic powder, salt, and pepper in a mixing bowl. Mix well until combined—ensure there are no dry flour pockets.
  2. Preheat your oven to 400°F if you plan to bake. If frying, heat oil in a skillet over medium heat until it shimmers.
  3. Scoop a tablespoon of the potato mixture and form it into a small ball. Repeat until all the mixture is used, trying to keep them uniform in size for even cooking.
  4. For baking, place the balls on a baking sheet lined with parchment paper and spray with cooking spray. Bake for 20-25 minutes or until golden brown. For frying, carefully place the balls in the heated oil and fry until golden and crispy, about 3-4 minutes on each side—look for a deep golden color on the surface.
  5. Serve warm as a snack, appetizer, or side dish that everyone will enjoy.

Notes

Be mindful of the frying temperature; oil that’s too hot will lead to a raw inside, while cooler oil will cause sogginess.
