Instructions
- Combine the leftover mashed potatoes, shredded cheese, flour, green onions, garlic powder, salt, and pepper in a mixing bowl. Mix well until combined—ensure there are no dry flour pockets.
- Preheat your oven to 400°F if you plan to bake. If frying, heat oil in a skillet over medium heat until it shimmers.
- Scoop a tablespoon of the potato mixture and form it into a small ball. Repeat until all the mixture is used, trying to keep them uniform in size for even cooking.
- For baking, place the balls on a baking sheet lined with parchment paper and spray with cooking spray. Bake for 20-25 minutes or until golden brown. For frying, carefully place the balls in the heated oil and fry until golden and crispy, about 3-4 minutes on each side—look for a deep golden color on the surface.
