Description

A hearty one-pan meal featuring seasoned ground beef, golden potatoes, and melted cheese that’s ready in under 45 minutes.


Ingredients

  • 1½ pounds ground beef (80/20 blend)
  • 2 pounds Yukon Gold potatoes, diced into ½-inch cubes
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon salt (divided)
  • ½ teaspoon black pepper (divided)
  • 1 cup beef broth
  • 1½ cups sharp cheddar cheese, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 4 green onions, sliced thin
  • ½ cup sour cream
  • 3 strips bacon, cooked and crumbled (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Dice potatoes into ½-inch cubes, pat dry, and season with half the salt and pepper.
  2. 2. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Brown potatoes in single layer for 4-5 minutes per side. Remove and set aside.
  3. 3. Add remaining oil to skillet. Cook onion for 3-4 minutes until softened.
  4. 4. Add bell pepper and cook 2-3 minutes. Add garlic and cook 30 seconds.
  5. 5. Push vegetables aside, add ground beef. Brown for 5-6 minutes, breaking up with spoon.
  6. 6. Mix beef with vegetables, add all spices and remaining salt and pepper. Cook 1-2 minutes.
  7. 7. Pour in beef broth, scraping up browned bits from bottom of skillet.
  8. 8. Return potatoes to skillet, nestling into beef mixture.
  9. 9. Simmer covered for 15-18 minutes, stirring occasionally, until potatoes are tender.
  10. 10. Turn off heat, top with cheeses, cover for 2-3 minutes to melt.
  11. 11. Top with green onions, bacon, and parsley. Serve with sour cream.

Notes

Store leftovers in refrigerator up to 4 days. Can be frozen up to 3 months. Reheat gently with splash of broth if needed.
