Description
A hearty one-pan meal featuring seasoned ground beef, golden potatoes, and melted cheese that’s ready in under 45 minutes.

- 1½ pounds ground beef (80/20 blend)
- 2 pounds Yukon Gold potatoes, diced into ½-inch cubes
- 1 large yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon ground cumin
- 1 teaspoon salt (divided)
- ½ teaspoon black pepper (divided)
- 1 cup beef broth
- 1½ cups sharp cheddar cheese, shredded
- ½ cup Monterey Jack cheese, shredded
- 4 green onions, sliced thin
- ½ cup sour cream
- 3 strips bacon, cooked and crumbled (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Dice potatoes into ½-inch cubes, pat dry, and season with half the salt and pepper.
- 2. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Brown potatoes in single layer for 4-5 minutes per side. Remove and set aside.
- 3. Add remaining oil to skillet. Cook onion for 3-4 minutes until softened.
- 4. Add bell pepper and cook 2-3 minutes. Add garlic and cook 30 seconds.
- 5. Push vegetables aside, add ground beef. Brown for 5-6 minutes, breaking up with spoon.
- 6. Mix beef with vegetables, add all spices and remaining salt and pepper. Cook 1-2 minutes.
- 7. Pour in beef broth, scraping up browned bits from bottom of skillet.
- 8. Return potatoes to skillet, nestling into beef mixture.
- 9. Simmer covered for 15-18 minutes, stirring occasionally, until potatoes are tender.
- 10. Turn off heat, top with cheeses, cover for 2-3 minutes to melt.
- 11. Top with green onions, bacon, and parsley. Serve with sour cream.
Notes
Store leftovers in refrigerator up to 4 days. Can be frozen up to 3 months. Reheat gently with splash of broth if needed.
