Description

A refreshing macaroni salad that balances creaminess with crunch, perfect for picnics and barbecues.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sweet pickles, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water until cool to prevent sticking.
  2. In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar. Mix well until you have a uniform dressing.
  3. Add the cooked macaroni, diced celery, bell pepper, red onion, and sweet pickles to the dressing.
  4. Stir until everything is well coated; make sure no pasta pieces are left untouched.
  5. Season with salt and pepper to taste, adjusting for your preference.
  6. Chill in the refrigerator for at least an hour before serving.
