- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup diced celery
- 1 cup diced bell pepper
- 1/2 cup diced red onion
- 1/2 cup sweet pickles, chopped
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and rinse under cold water until cool to prevent sticking.
- In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar. Mix well until you have a uniform dressing.
- Add the cooked macaroni, diced celery, bell pepper, red onion, and sweet pickles to the dressing.
- Stir until everything is well coated; make sure no pasta pieces are left untouched.
- Season with salt and pepper to taste, adjusting for your preference.
- Chill in the refrigerator for at least an hour before serving.
