- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the chopped onion and garlic, sautéing until fragrant, about 2 minutes.
- Increase the heat and add the ground beef, breaking it apart. Cook until fully browned, around 5–7 minutes.
- Stir in the bell pepper, zucchini, and cherry tomatoes, letting them cook for another 3–5 minutes until just tender.
- Sprinkle in the dried oregano, ground cumin, salt, and pepper, mixing everything well.
- Cook for an additional 2 minutes, then remove from heat and serve immediately.
Notes
Avoid overcrowding the pan when browning the beef to ensure proper searing. You can swap vegetables based on preference.
