Ingredients

  • 1 cup uncooked rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 cup shredded cheese (optional)
  • Fresh cilantro (for garnish)

Instructions

  1. Brown the ground beef in a large skillet over medium heat until fully cooked, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped onion and minced garlic, stirring until the onion is translucent, about 3-4 minutes.
  3. Stir in the chili powder, cumin, salt, and pepper, mixing well.
  4. Add the uncooked rice, black beans, diced tomatoes, corn, and beef broth. Stir thoroughly to combine.
  5. Bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let simmer for about 20 minutes, until rice is tender.
  6. Remove from heat and stir in shredded cheese, if desired, until melted.
  7. Garnish with fresh cilantro before serving.
