Description

Ingredients

  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, usually until al dente, and then drain and let it cool.
  2. In a large bowl, combine the cooked pasta, corn, diced bell pepper, chopped red onion, cilantro, and crumbled cotija cheese.
  3. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta salad and toss until everything is evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to meld the flavors together.
