Description

Crispy on the outside and tender on the inside, these Mojo Potatoes are perfect for gatherings or a comforting weekend meal.


Ingredients

Scale
  • 4 medium-sized potatoes (washed)
  • 4 cups water
  • 1 tablespoon rock salt
  • 1 cup yogurt (or buttermilk or sour cream)
  • 1 packet chicken breading mix (about 1 cup)
  • 1 teaspoon paprika powder (optional)
  • 12 cups oil (for frying)

Instructions

  1. Place water in a pot and bring to a boil over medium heat.
  2. Cut the unpeeled potatoes into 1/4 inch thick slices.
  3. Add 1 tablespoon of salt, then add the potatoes. Cook for 3 minutes.
  4. Transfer the contents into a colander to drain water.
  5. Pour in the yogurt and toss to coat each piece.
  6. Heat 1-2 cups of oil in a large frying pan.
  7. Mix the chicken breading mix and paprika powder on a plate.
  8. Coat each potato slice with the breading mix.
  9. Drop potatoes into the oil and fry for 2-3 minutes on each side.
  10. Remove the mojos and transfer to a plate lined with paper towels.
  11. Enjoy with gravy or your favorite dip.

Notes

Ensure not to overcrowd the frying pan for the crispiest results. Use yogurt for flavor richness, or substitute with buttermilk or sour cream.
