- 2 cups almond milk (or any plant-based milk)
- 1 apple, diced
- 1/4 cup maple syrup or honey
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup raisins (optional)
- Chopped nuts for topping (optional)
Instructions
- Rinse the quinoa under cold water to remove any bitterness.
- Combine rinsed quinoa and almond milk in a pot and bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Mix the cooked quinoa, diced apples, maple syrup, cinnamon, nutmeg, and raisins in a large bowl.
- Divide the mixture into containers and refrigerate overnight to allow the flavors to meld.
- Serve cold or warm, topped with chopped nuts if desired.
