- 1 1/2 cups cooked chickpeas (or 1, 15 oz can, rinsed and drained)
- 1/4 cup peanut butter or cashew butter (choose creamy for best results)
- 1/4 cup gluten-free oat flour
- 2 tbsp maple syrup
- 3 tbsp brown sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/3 cup vegan mini chocolate chips (optional)
- 1, 4 oz bar of vegan dark chocolate
Instructions
- Start by placing the rinsed and drained chickpeas in a clean kitchen cloth. Gently rub them to dry, removing any excess skins that might come off.
- Transfer the chickpeas to a food processor along with the peanut or cashew butter, oat flour, maple syrup, brown sugar, salt, and vanilla extract. Pulse on high until the mixture forms a dough and there are no visible chunks of chickpeas.
- If you want to include chocolate chips, add them to the food processor and pulse a few times just to incorporate.
- Place the dough in the fridge to chill for 15 minutes; this will make it easier to handle.
- Prepare a parchment-lined tray. Use a cookie scoop or a tablespoon to portion the dough, then roll each portion into a bite-sized ball.
- Freeze the tray for about 30 minutes to set the dough.
- While the bites are firming up, melt the dark chocolate. You can do this in the microwave by heating in 15-second intervals, stirring until smooth, or on the stove in a double boiler.
- Remove the cookie dough bites from the freezer. Once the chocolate has cooled slightly, dip each cookie dough ball in the melted chocolate, allowing the excess to drip off before placing them back on the parchment paper.
- Refrigerate for a few minutes to allow the chocolate to harden. Enjoy your creation once it’s set.
Notes
Ensure that the chickpeas are as dry as possible to achieve the best texture. Skipping the chilling step can lead to a soft dough that doesn’t hold its shape well.
