Description
A quick and satisfying one-pan meal featuring fluffy couscous, fresh garlic, ripe tomatoes, and aromatic basil.
Ingredients
Scale
- 1 1/3 cup tomatoes, chopped
- 1/2 cup couscous
- 1 Tbsp green pesto
- 2 garlic cloves, minced
- 1/2 cup mozzarella
- Parmesan (optional)
- Fresh basil leaves
Instructions
- Start by chopping the tomatoes and mincing the garlic for the best results.
- Cook the tomatoes in a non-stick pan over medium-high heat with a lid on for about 2 minutes.
- Press the tomatoes down with a spatula to release their juices, creating a flavorful base.
- Add the couscous and 2 tablespoons of water, then reduce the heat to medium.
- Cover the pan to let the couscous absorb the flavors for about 6-7 minutes.
- Stir in the pesto and minced garlic, allowing the garlic’s aroma to fill your kitchen.
- Incorporate the mozzarella, stirring gently until it melts into the mixture.
- Serve hot, topped with fresh basil leaves and optional Parmesan cheese.
Notes
To avoid overcooking the couscous, keep a close eye on it while it simmers.
