  • 1 ½ cups low-sodium chicken or vegetable broth
  • ½ cup heavy cream (or half-and-half for a lighter option)
  • ¼ cup grated Parmesan cheese (optional, but recommended)
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions

  1. 1. Heat the olive oil in a large oven-safe skillet (cast iron or stainless steel works well) over medium-high heat.
  2. 2. Add the ground meat to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. 3. Add the chopped onion to the skillet with the browned meat. Cook, stirring occasionally, until the onion is softened and translucent, about 3-4 minutes.
  4. 4. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  5. 5. Add the cubed potatoes to the skillet. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Stir everything to combine.
  6. 6. Pour in the chicken or vegetable broth. Bring the mixture to a simmer, then reduce the heat to medium-low, cover the skillet, and let it cook for about 10-12 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.
  7. 7. Once the potatoes are tender, uncover the skillet. Stir in the heavy cream and grated Parmesan cheese (if using).
