Ingredients
- 1 tablespoon olive oil

- 1 pound Yukon Gold potatoes, cut into ½-inch cubes
- ½ teaspoon salt, plus more to taste
- ¼ teaspoon black pepper, plus more to taste
- 1 ½ cups low-sodium chicken or vegetable broth
- ½ cup heavy cream (or half-and-half for a lighter option)
- ¼ cup grated Parmesan cheese (optional, but recommended)
- 2 tablespoons chopped fresh parsley, for garnish (optional)
Instructions
- 1. Heat the olive oil in a large oven-safe skillet (cast iron or stainless steel works well) over medium-high heat.
- 2. Add the ground meat to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- 3. Add the chopped onion to the skillet with the browned meat. Cook, stirring occasionally, until the onion is softened and translucent, about 3-4 minutes.
- 4. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- 5. Add the cubed potatoes to the skillet. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Stir everything to combine.
- 6. Pour in the chicken or vegetable broth. Bring the mixture to a simmer, then reduce the heat to medium-low, cover the skillet, and let it cook for about 10-12 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.
- 7. Once the potatoes are tender, uncover the skillet. Stir in the heavy cream and grated Parmesan cheese (if using).
