Description

A hearty and flavorful one-pan meal featuring ground beef, sweet potatoes, and Tex-Mex spices. Minimal cleanup for a delicious weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (85% or 90% lean)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 medium sweet potato (about 1 pound), peeled and diced into 1/2-inch cubes
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can diced tomatoes and green chilies, undrained (like Rotel)
  • 1/4 cup water or beef broth
  • Optional toppings: shredded cheddar cheese, sour cream or plain Greek yogurt, chopped fresh cilantro, sliced avocado, lime wedges

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess grease. Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  2. 2. Sprinkle chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper over the beef mixture. Stir well to coat. Add diced sweet potato and stir to combine.
  3. 3. Add rinsed and drained black beans, undrained diced tomatoes and green chilies, and water or beef broth. Stir thoroughly.
  4. 4. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until sweet potato is tender when pierced with a fork. Stir occasionally. Add more liquid if needed.
  5. 5. Taste and adjust seasoning. Remove from heat. Serve with optional toppings.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave, adding a splash of liquid if dry.
