Description
A hearty and flavorful one-pan meal featuring ground beef, sweet potatoes, and Tex-Mex spices. Minimal cleanup for a delicious weeknight dinner.

- 1 tablespoon olive oil
- 1 pound lean ground beef (85% or 90% lean)
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (or to taste)
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 1 medium sweet potato (about 1 pound), peeled and diced into 1/2-inch cubes
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (10-ounce) can diced tomatoes and green chilies, undrained (like Rotel)
- 1/4 cup water or beef broth
- Optional toppings: shredded cheddar cheese, sour cream or plain Greek yogurt, chopped fresh cilantro, sliced avocado, lime wedges
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess grease. Add chopped onion and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- 2. Sprinkle chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper over the beef mixture. Stir well to coat. Add diced sweet potato and stir to combine.
- 3. Add rinsed and drained black beans, undrained diced tomatoes and green chilies, and water or beef broth. Stir thoroughly.
- 4. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until sweet potato is tender when pierced with a fork. Stir occasionally. Add more liquid if needed.
- 5. Taste and adjust seasoning. Remove from heat. Serve with optional toppings.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave, adding a splash of liquid if dry.
