  • 1 pound ground beef (80/20 blend)
  • 12 ounces penne or rigatoni pasta
  • 4 tablespoons butter, divided
  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 2 tablespoons tomato paste
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat. Cook ground beef for 6-8 minutes until browned and no pink remains.
  2. 2. Push beef to one side, add 2 tablespoons butter to empty space. Add onion and cook 3-4 minutes until softened.
  3. 3. Add minced garlic and cook 30-60 seconds until fragrant.
  4. 4. Stir in tomato paste, Italian seasoning, paprika, garlic powder, and red pepper flakes. Cook 1-2 minutes.
  5. 5. Add uncooked pasta and beef broth, ensuring pasta is covered. Bring to boil.
  6. 6. Reduce heat to medium-low, cover and simmer 12-15 minutes, stirring every 3-4 minutes.
  7. 7. Remove from heat. Stir in heavy cream, remaining butter, and Parmesan cheese.
  8. 8. Season with salt and pepper. Let rest 2-3 minutes, then garnish with parsley and extra cheese.

Notes

Store leftovers in refrigerator for 3-4 days. Reheat gently with a splash of cream to restore consistency.
