- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups low-sodium chicken broth
- 1 teaspoon salt, plus more to taste
- ½ teaspoon black pepper, plus more to taste
- 1 pound boneless, skinless chicken breasts or thighs
- 2 cups cooked egg noodles (or your favorite noodle)
- 2 tablespoons fresh parsley, chopped (for garnish, optional)
Instructions
- 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
- 2. Stir in the minced garlic and cook for about 1 minute more until fragrant. Be careful not to burn the garlic. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
- 3. Add the salt and pepper to the broth. Nestle the chicken breasts or thighs into the pot. Make sure they are mostly submerged in the liquid. Bring the broth to a gentle simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the chicken is cooked through.
- 4. Carefully remove the cooked chicken from the pot and place it on a clean cutting board. Using two forks, shred the chicken into bite-sized pieces.
- 5. Return the shredded chicken to the pot. Add the cooked egg noodles. Stir everything together and let the soup simmer for another 5 minutes, or until the noodles are heated through and the flavors have melded.
- 6. Taste and adjust seasoning with additional salt and pepper if needed. Ladle the hot soup into bowls. Sprinkle with fresh chopped parsley, if desired.
Notes
Store any leftover soup in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in freezer-safe containers for up to 2-3 months. Consider cooking noodles separately for freezing to maintain best texture upon reheating.
