Description

Quick and customizable plant-based burritos filled with brown rice, black beans, and fresh vegetables.


Ingredients

  • 1 cup cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Whole wheat tortillas
  • Fresh cilantro for garnish (optional)

Instructions

  1. Combine cooked brown rice, black beans, corn, bell pepper, diced tomatoes, cumin, chili powder, salt, and pepper in a large bowl.
  2. Mix well until all ingredients are combined.
  3. Warm the whole wheat tortillas in a skillet or microwave.
  4. Place a portion of the filling on each tortilla, adding avocado slices and fresh cilantro if desired.
  5. Roll up the burritos, folding in the sides, and serve immediately or wrap for meal prep.
