- 1 bell pepper, diced

- 4 cups chicken broth
- 2 bay leaves

- Salt and pepper to taste
- 2 cups cooked rice
- Chopped green onions for garnish
Instructions
- Sauté the diced onion, bell pepper, and celery in a large pot until softened, about 5 minutes.
- Add the sliced sausage and cook until browned, about 7 minutes.
- Stir in the minced garlic and Cajun seasoning, and cook for another minute until fragrant.
- Add the red beans, chicken broth, and bay leaves to the pot. Bring to a boil, then reduce heat and let simmer for at least 60 minutes, stirring occasionally.
- Season with salt and pepper to taste. The texture should be creamy and thick.
