Ingredients

  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Chopped green onions for garnish

Instructions

  1. Sauté the diced onion, bell pepper, and celery in a large pot until softened, about 5 minutes.
  2. Add the sliced sausage and cook until browned, about 7 minutes.
  3. Stir in the minced garlic and Cajun seasoning, and cook for another minute until fragrant.
  4. Add the red beans, chicken broth, and bay leaves to the pot. Bring to a boil, then reduce heat and let simmer for at least 60 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. The texture should be creamy and thick.
  6. Serve over cooked rice, garnished with chopped green onions.
