Ingredients

- 1 medium head of green cabbage, chopped
- 1 cup of dried green or brown lentils, rinsed
- 1 large onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth (or water)
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of paprika
Instructions
- Heat olive oil in a large pot over medium heat. Once hot, add the chopped onion and garlic, cooking until the onion is translucent, about 5 minutes.
- Add the chopped cabbage and sauté for another 5-7 minutes until it starts to wilt.
- Stir in the rinsed lentils, broth, salt, pepper, and paprika, bringing the mixture to a gentle boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils and cabbage are tender.
- Taste and adjust seasoning if necessary before serving.
Notes
For best flavor, let the dish sit overnight before serving.
