Description

Ingredients

  • 8 oz pasta (e.g., egg noodles or penne)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until soft and fragrant.
  2. Stir in the bell pepper and paprika, cooking for another 2 minutes.
  3. Add the chickpeas and diced tomatoes, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the pasta and cook according to package directions until al dente.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
