Ingredients

  • 12 bunches of collard greens
  • Smoked turkey meat
  • 1 red bell pepper (diced)
  • 1 medium onion (diced)
  • 1/2 jalapeño (seeded and diced)
  • 2 tablespoons brown sugar
  • 2 tablespoons Lawry’s seasoned salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon crushed red peppers
  • 1 teaspoon chicken bouillon

Instructions

  1. Thoroughly clean collard greens by soaking them in water with vinegar for 15 minutes. Scrub, rinse, and repeat to ensure all grit is removed.
  2. Roll and chop greens into ribbons about an inch wide.
  3. Add smoked turkey meat submerged in water to a pot and cook until tender.
  4. Once the meat is tender, add the collard greens and other diced ingredients, cooking until greens are softened.
  5. Adjust seasonings as needed and serve.

Notes

Add a splash of vinegar or hot sauce before serving for extra flavor. Leftovers can be used in soups or quiches.
