Description

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups green chiles, chopped (fresh or canned)
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup potatoes, diced (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant.
  3. Stir in the ground beef, breaking it apart, and cook until browned.
  4. Mix in the green chiles, diced tomatoes, beef broth, cumin, and optional potatoes if you like.
  5. Bring the mixture to a boil, then reduce the heat to let it simmer for about 30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, with a sprinkle of fresh herbs if desired.

Notes

Try adding a splash of lime juice at the end for additional brightness. Fresh herbs like cilantro can also enhance the flavor.
