Description

A flavorful and easy weeknight dinner made with tender chicken and colorful vegetables cooked slowly to infuse rich flavors.


Ingredients

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt (or more)
  • 1 1/2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Season the chicken with salt and pepper, ensuring an even layer of seasoning across all strips.
  2. Add the chicken and all the other ingredients into the slow cooker, stirring thoroughly to combine and coat the chicken.
  3. Cook on HIGH for 120-180 minutes or LOW for 240-360 minutes. You’ll know it’s ready when the chicken is tender and easily shreds with a fork.

Notes

For a richer flavor, consider using chicken thighs instead of breasts. Adjust the level of fajita seasoning according to your heat preference.
