- 2 pounds boneless, skinless chicken breasts, sliced into thin strips
- 3 large bell peppers, sliced
- 1 large onion or 2 small onions, sliced
- 15 ounces diced tomatoes or salsa
- 1/3 cup fajita seasonings
- Salt & pepper to season the chicken
- 3/4 cup low-sodium chicken broth (for Instant Pot only)
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 1/2 teaspoons salt (or more)
- 1 1/2 teaspoons oregano
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon pepper
Instructions
- Season the chicken with salt and pepper, ensuring an even layer of seasoning across all strips.
- Add the chicken and all the other ingredients into the slow cooker, stirring thoroughly to combine and coat the chicken.
- Cook on HIGH for 120-180 minutes or LOW for 240-360 minutes. You’ll know it’s ready when the chicken is tender and easily shreds with a fork.
Notes
For a richer flavor, consider using chicken thighs instead of breasts. Adjust the level of fajita seasoning according to your heat preference.
