Ingredients
Scale
- 1 Tablespoon sesame oil
- ¼ cup onion, diced (yellow or white onion works)
- 2 cloves of garlic, minced
- 1 tablespoon minced ginger (fresh or ginger paste)
- 14 ounce block extra firm tofu, pressed
- ¼ cup Tamari (or low sodium soy sauce)
- 2 Tablespoon Thai sweet red chili sauce
- Juice of 1 lime
- 1 teaspoon maple syrup (or agave)
- â…“ cup cashews, chopped (raw or roasted/salted)
- ¼ cup scallions, chopped
- ¼ cup cilantro, fresh, chopped
- ¼–½ cup carrots, shredded
- Sesame seeds, for topping
- 1 head butter lettuce, leaves removed and washed
Instructions
- Heat a pan over medium-high heat and add the sesame oil.
- Add the diced onion to the pan. Sauté for 2-3 minutes until they become translucent and slightly browned.
- Stir in the minced garlic and ginger. Cook for an additional 2 minutes.
- Crumble the tofu directly into the pan. Use a spatula to mix it with the onions, garlic, and ginger while allowing it to brown for 4-5 minutes.
- Pour the sauce over the tofu mixture, adding chopped cashews. Toss everything together and lower the heat, letting it cook for 2 more minutes.
- Remove the pan from the heat. Mix in the shredded carrots, chopped scallions, and cilantro.
- Assemble each lettuce leaf with a generous spoonful of the tofu mixture. Top with sesame seeds and extra sauce before folding.
Notes
Ensure tofu is well-pressed before cooking for optimum browning. Sauté onions to caramelize for sweetness. For a spicier option, consider adding bell peppers or chili flakes.
