Description

Quick and versatile Tofu Lettuce Wraps filled with flavorful sautéed tofu, fresh vegetables, and a tasty sauce, perfect for busy weeknights.


Ingredients

  • 1 Tablespoon sesame oil
  • ¼ cup onion, diced (yellow or white onion works)
  • 2 cloves of garlic, minced
  • 1 tablespoon minced ginger (fresh or ginger paste)
  • 14 ounce block extra firm tofu, pressed
  • ¼ cup Tamari (or low sodium soy sauce)
  • 2 Tablespoon Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup (or agave)
  • â…“ cup cashews, chopped (raw or roasted/salted)
  • ¼ cup scallions, chopped
  • ¼ cup cilantro, fresh, chopped
  • ¼½ cup carrots, shredded
  • Sesame seeds, for topping
  • 1 head butter lettuce, leaves removed and washed

Instructions

  1. Heat a pan over medium-high heat and add the sesame oil.
  2. Add the diced onion to the pan. Sauté for 2-3 minutes until they become translucent and slightly browned.
  3. Stir in the minced garlic and ginger. Cook for an additional 2 minutes.
  4. Crumble the tofu directly into the pan. Use a spatula to mix it with the onions, garlic, and ginger while allowing it to brown for 4-5 minutes.
  5. Pour the sauce over the tofu mixture, adding chopped cashews. Toss everything together and lower the heat, letting it cook for 2 more minutes.
  6. Remove the pan from the heat. Mix in the shredded carrots, chopped scallions, and cilantro.
  7. Assemble each lettuce leaf with a generous spoonful of the tofu mixture. Top with sesame seeds and extra sauce before folding.

Notes

Ensure tofu is well-pressed before cooking for optimum browning. Sauté onions to caramelize for sweetness. For a spicier option, consider adding bell peppers or chili flakes.
