- 1/2 cup breadcrumbs (or oats)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
- Marinara sauce for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Mash the black beans in a large bowl until mostly smooth, leaving some chunks for texture.
- Add breadcrumbs, onion, garlic, cumin, smoked paprika, salt, and pepper, and mix until well combined.
- Form the mixture into small meatballs and place them on a lined baking sheet, ensuring they are spaced apart.
- Bake for 20-25 minutes, flipping halfway through, until firm and slightly crispy.
- Serve over pasta with marinara sauce or as an appetizer.
Notes
Rinse black beans thoroughly and ensure not to overbake the meatballs. Let them cool slightly before serving.
