Description
Tender slow cooker beef chops cooked low and slow, then coated in a rich and creamy garlic parmesan sauce. A comforting and easy meal perfect for busy weeknights.

- 1.5 to 2 pounds boneless beef chops (4–6 pieces, 3/4–1 inch thick)
- 1 tablespoon olive oil
- 1 small yellow onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup beef broth (low sodium preferred)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- 1. Pat beef chops dry with paper towels.
- 2. Heat olive oil in a skillet over medium-high heat and sear beef chops for 2–3 minutes per side until browned.
- 3. Transfer beef to the slow cooker.
- 4. In the same skillet, sauté onion for 2–3 minutes until soft, then add garlic and cook for 1 minute.
- 5. Add onion, garlic, Italian seasoning, salt, and pepper to the slow cooker.
- 6. Pour in beef broth.
- 7. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- 8. Remove beef and set aside.
- 9. Turn slow cooker to sauté mode (or transfer liquid to a saucepan) and bring to a simmer.
- 10. Stir in heavy cream and Parmesan cheese until sauce thickens slightly.
- 11. Return beef to the sauce and coat well.
- 12. Garnish with parsley if desired and serve.
Notes
Searing the beef adds depth of flavor. Adjust seasoning before serving. Add extra broth if sauce thickens too much.
