  • 2 pounds beef chuck roast, trimmed of excess fat and cut into 1-inch cubes
  • 1 large yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons mirin or dry sherry
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 6 cups beef broth
  • 1 star anise pod (optional)
  • 1 (8-ounce) package dried ramen noodles (discard flavor packets)
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: sliced green onions, a soft-boiled egg, corn kernels, sliced mushrooms, chili oil, fresh cilantro

Instructions

  1. 1. Place the cubed beef chuck roast into the bottom of your slow cooker.
  2. 2. Layer the thinly sliced yellow onion over the beef.
  3. 3. Add the minced garlic and grated ginger on top of the onions.
  4. 4. In a small bowl, whisk together the soy sauce, mirin (or dry sherry), brown sugar, and sesame oil. Pour this mixture evenly over the beef and vegetables.
  5. 5. Pour in the beef broth. If using, add the star anise pod.
  6. 6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is fork-tender.
  7. 7. Remove the star anise pod (if used) and discard it.
  8. 8. About 20-30 minutes before serving, cook the ramen noodles according to package directions.
  9. 9. Shred the beef with two forks, or leave in larger chunks.
  10. 10. To serve, place cooked ramen noodles into each bowl. Ladle the hot beef and broth mixture over the noodles. Top with desired garnishes.

Notes

Store leftover beef and broth in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave. Cook ramen noodles fresh when reheating for best results. For gluten-free, use tamari instead of soy sauce and ensure your ramen noodles are gluten-free.
